However she is 12 years older than the oldest son, so she may not be his mother.

I don't know much about the husband John, but there is enough other information that matches what I already have to make me believe the 1900 census is Oline.

The Oline Bergersdatter you have found in the census is born 1856 in Aasnæs.

The Oline Bergersdatter you are looking for should be born 1843 in Hoff.
That makes this Oline a better candidate. She is however married to a Ole.
She uses her husbands surname.

The Oline I found is wrong too. Her father was Ole Olsen.
She was married 1868 in Hof:
