In think the year was 400 when the Emperor Constantine demaned unity in
belief, and as a result some parts of what was believed (by some perhaps)
were rejected and others incorporated. The movement which became the Roman
Catholic religion well and truly existed before hand.

This time is difficult to imagine what you are thinking of in 400.
Constantine was baptized in 380 and Christianism was proclaimed the
official religion of Rome. I think he died that same year.
The Roman Catholic Church had three Councils that basically fixed the
doctrine. In 325 in Nicea, the Creed; in 382 in Rome, the Bible (Old
and New Testaments and rejection of any other books); in 431 in
Ephesus, the dual nature of Christ, God and Man (this the main cause of
divisions, e.g. Orthodox)

I think this is really the basic but some details deserve to be
mentioned. If I remember well, in Nicea was finally accepted that women
did have souls; and not by a large majority :-).

Sorry, I mixed the Emperors. Constantine died in 337 and Theodosius in
380. Both were baptized before they died.
