I suspect it's mistranscribed and should be "dom servant" - the usual
abbreviation for "domestic servant". She probably swept the floors, washed
the pots, etc.

I'd say she kept the bedrooms (dormitories = dorms) clean... a bit like
a modern backpackers' hostel.

That's what I would have said if it had been a UK census - was 'dom
servant' usual in US censuses ?
