In the 1887 Detroit City Directory, I found that my 2nd Great Grandfather
worked as a helper with "Gray, Toynton & Fox". Does anyone know what that
company was and did/produced?

Not really. It tells me what David Gray did there, but not much about the
company. I did find a later Detroit City Directory that listed 2nd Great
Grandpa as a Candy Maker for that same company though. Perhaps they were a
candy factory, or a dry goods company of some sort. Anthony (2nd Great
Grandpa) did own his own candy/ice cream shop from about 1905 until about
1924.
