Although I understand the first two paragraphs, I am confused as to what
information you are seeking. You found your great great grandfather in
1880 and 1900.
Try 1910 and possibly 1920.

If I was the one looking, I'd try looking for Joseph Mumford in the 1870
census. Do you know when he was married? Or when he moved to Florida?
If not, then you'll have to do some searching around the various
states mentioned -- Florida, since that's where he was in 1880, Georgia,
since that's where it states he was born at one time, and Alabama, since
that's where it's listed he was born at another time. Once you locate
him in the 1870 census, then work backward to the 1860 and then the 1850
ones. If you're lucky, he'll be living with his parents in both
censuses and you'll be able to get the name of his father.
Also, if you know when and where he died, you can try to get a copy of
his death certificate -- the names of his parents might be on there,
including the maiden name of his mother -- be warned though, that the
information is only as good as the knowledge of the person who provided
it. So, say if Joseph's son gave them the information for the death
certificate, but never was told the names of his grandparents, then that
information won't be there (or if he was given the wrong information,
then the wrong names will be there). Also, during stressful times like
that, it's not unusual for a person to be confused and give the wrong
information.
As for the differences on the census records regarding Joseph's state of
birth -- he might not have been the person giving the information for
both censuses, and that would explain the discrepancies.

time and either the census taker or the person giving the information

The Alabama/Georgia thing was probably just confusion on the part of whoever
was giving the info. I went back in the census and forwards to later years
looking for Joseph and his family. Didn't find the parents, like Steve
wanted, but did trace some children and they seem to have moved extensively
between Alabama, Georgia and Florida. Jackson county is right on the border
where all three states meet. And although Joseph and family are in Jackson
Co. FL in 1880 and 1900, all the children seem to have been born in Henry
(later Houston) county AL in the years in between. <shrug>

was formed in Jackson Co, FL and surrounding counties, so it looks like
Joseph and family should be located in that area. I haven't been able to
find them in earlier censuses than 1880. I also can't find Mary Paulk living
with her parents.

The age is off by a few years if this is your Joseph T. Mumford. I don't see
how this one could be much older if Martha is his mother and her age is
correct at 24.
It looks like Martha's husband's name is James. Here's a listing from the

4 females under 21, 0 females over 21
Since Martha is shown with real estate worth $50 you might want to look at
