Would the occupation in a census: "farmer", "general farm" be a crop
farmer rather than one who raises cattle? We probably don't know
conclusively, but what do you folks think?

It would help if you said where and when the term refers to - these things

vary with time and geography, but I would guess that they raise both animals
and crops.

"General Farm" is just that: a farm that doesn't specialize. It's
basically a "subsistence farm" that creates a surplus. So he probably
sold eggs, a little beef or pork, vegetables, and whatever else was doing
well.

My GGGrandfather was a farmer who was variously listed as "farmer",
"gardener", and "fruit farmer". He grew Keefer pears, developed
strawberries for the restaurant trade (the "Sparkle" strawberry), and
sold tomatoes to Campbell's Soup. He also supplied flowers to
Philadelphia hotels and florists. The family owned a nursery in
Pennsauken until the 1980's.

It means he does't specialize -- i.e., he's not a cotton farmer, a wheat
farmer, a rye farmer, a corn farmer, dairy farmer, cattle rancher, sheep
rancher, etc.

Chances are good he was farming to raise food and cattle for himself and
his family, not for wholesale. [At any rate, that's what all mine were
doing!]

It means he does't specialize -- i.e., he's not a cotton farmer, a wheat
farmer, a rye farmer, a corn farmer, dairy farmer, cattle rancher, sheep
