I would like to know if there is an accepted standard for recording
ancestors that use just a single name.

For instance, at this website you can see some information for King of
Franconia Marcomir IV.

Marcomir's wife is listed simply as Athildis. I assume that these are
the given names. What do most genealogists record for their surnames?

As you say, not everyone had Surnames. As a matter of fact go back far
enough
and no one had surnames. So I leave the surname field blank, just like I do
for someone with no middle name.

Sad to say I have seen some ways of handling this that I think is terrible.
I saw a record for a Queen Anne of Spain. Her surname was "Spain" her given
name "Queen"
her middle name "Anne". It should have just bee "Anne" and then put her
title
in the title field.
