Need to find 1861 birth record.

Okay, after nearly 20 years of searching on and off, I finally had a
major breakthrough this week. 3 years ago I posted a message on
Ancestry.com and forgot all about it after a few weeks and no replies.
This month, out of the blue, I got two replies. Thankfully I still
have the same e-mail address. The first wasn't much help but the
second one was incredible. It gave me a few critical pieces of
information and then I was able to find the key person I've been
looking for all this time. Turns out our last name was entirely
misspelled in the 1900 census and no searches were coming up with it.
Once I tripped over it (looking for a son with an odd name who I
didn't previously know existed), I got a ton of key information.

I now know that Charles Heimlich shows January, 1861 as his birthdate
and the place as Germany. That may be off by a couple of months but
it's fairly close.

I now need to find out how to go about tracking him into Germany. This
last contact I got says he's got the boat information on when exactly
he immigrated to the US and believes it was out of Dublin from London,
but needs to check. Anyway, now I'm stuck as I have no idea WHERE in
Germany he's from but keep hearing about how the Germans were so great
with their documentation. Where do I start?

Immigration records will tell of his residence in Europe.
And once you nail down more about where in Germany,
his Emigration records will tell you more.
Have you tried to find the Naturalization records in the USA?
Sometimes these have detailed information on their place of birth.

Really? FANTASTIC! So how do you go about finding immigration records?
We believe he came into NY, though I haven't seen the proof of this
yet. One cousin claims to have once found the boat information
(Dublin, from London, to NY).

That's great news. So if we find that he's from a certain area then we
can check that area for emmigration papers as well?

Had no idea that was even an option. Where would one start?
